Hidden

Lately my kiddos are getting more picky about eating veggies. That's not good. Xavier only has a few veggies he will eat. He literally made himself throw up when I tried to get him to eat peas recently. And Wes now thinks he doesn't really need veggies at all. Oy!

So I checked out the Deceptively Delicious cookbook at the library. It's basically all about how to hide veggies (in the form of purees) in your kid's food. I'm still serving them the veggies in regular form and hoping they will come to like them again. But.....at least this way I know they are getting something during this picky stage.

A few of our recent favorites:
- Cauliflower in scrambled eggs
- Butternut Squash in spaghetti sauce
- Pumpkin in pancakes (i also add flax seed and cinnamon to the pancakes -- sooooo yummy!)
- Carrot in applesauce muffins

I still have more recipes from the book that I want to try. This is a good start though.

I've always struggled getting X to eat carrots ever since he was little. I know many people have been successful by offering some kind of dip with the carrots. But, he had a hard time eating raw carrots because they are so tough. A friend gave me a tip: steam the carrots a little to make them semi - soft, then refrigerate, then serve them cold with a dip. I tried it last week. X ate a bunch of soft carrots with hummus (he's a hummus freak lately!) Wes just licked the hummus off the carrots and left the carrots on his tray. Little stinker!

If anyone else has any other veggie tricks I'm all ears!!!

We're hooked on smoothies lately. I add in handfuls of spinach and no one notices!

Brilliant! I have wanted to investigate the whole "green smoothie thing" too which sounds like what the previous commenter mentioned! I think what I did was something like: unsweetened grape juice or apple juice (we don't drink juice, so this is an unaccustomed amount of sweetness for him) mixed with water, add ice, raspberries, strawberries (both frozen) and frozen spinach or peas or whatever it is that I'm wanting him to eat, blend to a slushy-like consistency, then freeze in ice cube trays. Then I would cut them up bite-sized with a sharp, serrated knife. I called them "fruit and vegetable popsicle bites." I wanted him to know there were vegetables in there so he would get reaccustomed to the idea, Yes, you are eating a vegetable, and YES, it is GOOD. I need to do that again. I also tried orange juice blended up with carrots, that didn't go over as well but I think there could be lots of potential combinations. Popsicles are just so great as it gets hot. I love the things you tried, I need to try some of those ideas! I figure the taste is still reaching their taste buds even though it's in a slightly different form, so it's still kind of exposing them to that taste even though they're not eating plain cauliflower or whatever.

Frankly I wouldn't eat plain cauliflower either! :)
