Spaghetti Squash

In a never ending attempt to eat a little healthier, I decided to make a spaghetti squash the other night. I did this awhile ago and it didn't go over well. But this time I had a new plan.

Spaghetti squash is easy -- you cut the squash in have and bake it. Then use a fork to pull out strings (same idea as like shredding pork) that resemble spaghetti noodles. It's wild to me that it does this. And it's yummy!



The taste and texture is not a complete match to regular noodles. Read: my kids would know the difference So, this time I mixed half spaghetti squash and half regular noodles. Then I put meat sauce over everything and served it as usual spaghetti.

I totally fooled Wes! He gobbled it up :) Elliott hates spaghetti in general so I wasn't surprised when he didn't eat it. And in a total bad mood, Xavier refused to eat any dinner.at.all (nice).



I thought it was delicious. Apparently Walter didn't realize what I was doing because he came to the table with a bowl of regular spaghetti and then a side dish of spaghetti squash that he ate plain.

I just gave him a look. Whatever!
